Snow Muffins

SNOW?

Got too much this winter? This recipe calls for a whole cup! Kids love to scoop up the snow and mix it into the batter of these fun muffins!

Ingredients:

2 cups flour (you can use some whole wheat)

3 teaspoons baking powder

½ cup sugar

½ teaspoon salt

¾ cup milk

1 egg ( the yellow disc in the photo is a frozen egg. We keep chickens in the summer and freeze extra eggs for winter baking)

4 tablespoons melted butter

1 teaspoon grated orange or lemon rind

1 heaping cup clean snow

(optional, add nuts, chocolate chips or raisins)

Method:

Makes 10 muffins. Grease the muffin tin. (Or let your kids do it, just be sure to do it again before spooning in the batter)

Mix the dry ingredients into a large bowl. Beat the milk, egg, butter and rind in a smaller bowl.

Add the wet ingredients to the dry ingredients and mix.

Add the heaping cup of snow and mix in lightly.

Spoon the batter into 10 greased muffin tins and bake at 375 for about 15 minutes.

For extra fun, create an icing sugar snow sprinkling by sifting ½ teaspoon of icing sugar on top!

  1. Your title caught my eye while I was visitng natural Suburbia. I just made pancake and sausage muffins and we are getting snow. How much fun will the girls have making these for snack later. I guess it will be a muffin kind of day.

  2. Nice recipe!! I only wish we would get some snow again here in the Netherlands….It already melted, I cannot wait to see the kids faces when I tell them to go outside and collect some snow:)

  6. Hi Kelleys,
    I just take them out ahead of time and thaw in the bowl. After about 10 minutes they thaw enough that you can chop them up and after that it is really fast. The disc is only about half an inch thick.
